Healthy Tasty Pasties: Spicy Ones and Acid-Reflux Friendly

Welcome to My Kitchen Healthy Pastry Collection!

Hi there, I had Arabic Neighbours years ago who showed me Pasties could be Healthy instead of Unhealthy - and Tasty too. See the Arabic Type Pastry Recipe I am using HERE. It is Tasty Wholemeal, and it doesn't have all the Unhealthy Canola or Sunflower Industrial Oils the Commercial Bakeries use OR the Modern Wheat Flour which is not really good for our Health. Especially if you are on an Acid-Safe Diet for Reflux or Heartburn Etc.

And I'd like to place Several Recipes on OURS AUSTRALIA for Readers and Visitors with that Health Issue because thousands of people in Australia have it. I'm on that Diet recently, and I see no reason why every meal has to be Bland...... so I am learning how to do Spice-Swaps from Certain Spices to Other Spices or Herbs for Taste. Hey?

Everyday Classic Vegetarian Pasty Filling

A timeless, comforting bakery favorite packed with robust frozen peas, sweetcorn, and tender diced carrots, brought together with a base of slow-sautéed soft onions and freshly cracked black pepper. Hearty, structured, and satisfyingly thick with zero mush!

The Whole-Food Ingredients:

  • 1 cup Red or Brown Onion (Finely diced)
  • 1 cup Carrot (Peeled and cut into distinct, firm 1cm cubes)
  • 1/2 cup Firm Green Peas (Frozen or fresh)
  • 1/2 cup Sweetcorn Kernels (Frozen or fresh)
  • 1 cup White Potato (Peeled and cut into distinct, firm 1cm cubes—waxy varieties hold their shape beautifully)
  • 1 tbsp Pure Ghee or Cold-Pressed Extra Virgin Olive Oil (For your pan base)
  • 1/2 tsp Freshly Cracked Black Pepper (For that authentic, warming bakery-bite)
  • A good pinch of Celtic Sea Salt or Himalayan Pink Salt

The Culinary Preparation Steps:

  1. The Soft Onion Base: Melt your tablespoon of Ghee or Olive Oil in a large frying pan over medium heat. Add your finely diced onion. Sauté steadily for 4 to 5 minutes, stirring occasionally, until the onions are completely soft, sweet, transparent, and cooked right through. This slow-heat method is vital to thoroughly break down and neutralize the raw, volatile sulfur compounds.
  2. Toasting the Pepper: Turn the heat down to low. Add your 1/2 teaspoon of freshly cracked black pepper directly into the hot, soft onions. Stir constantly for 30 seconds to let the natural heat draw out the aromatic piperine oils from the pepper until it smells rich and savory.
  3. The Structured Tumble (No Mush!): Remove the pan from the heat entirely. Throw your raw, distinct 1cm cubes of white potato, carrot, and your frozen peas and sweetcorn straight into the pan with the seasoned onions. Add a good pinch of Celtic salt and toss everything together thoroughly until every single vegetable cube is lightly glistening with the seasoned oil.
  4. Ready to Stuff: Allow the filling to cool slightly before spooning a generous mound into your rolled-out Wholemeal Spelt or Khorasan pastry circles (made in your Bear Dough Maker!). The raw potato and carrot cubes will steam to a perfect, firm-tender state inside the pastry shell while it bakes, preserving their distinct shape so it never turns into baby food.

Spicy Pasties (Arabic Style)

For those who don't have severe acid reflux and want that traditional Middle Eastern heat.

The Build: Wholemeal Spelt pastry enclosing structured cubes of white potato, carrot, or pumpkin, tossed with whole green peas and authentic fiery chili flakes or diced fresh chilies.

The Whole-Food Ingredients:

  • 1 cup Fresh Leek or Brown Onion (Finely diced)
  • 1 cup White Potato (Peeled and cut into distinct, firm 1cm cubes)
  • 1 cup Carrot or Pumpkin (Peeled and cut into distinct, firm 1cm cubes)
  • 1/2 cup Firm Green Peas (Frozen or fresh)
  • 1 tbsp Pure Ghee, Cold-Pressed Olive Oil, or Macadamia Oil (For your pan base)
  • 1 to 1.5 tsp Authentic Chili Flakes (Adjust to your preferred medium-heat level—never use powders cut with artificial flowing agents)
  • 1/2 tsp Ground Cumin (For that essential Middle Eastern earthy warmth)
  • 1/2 tsp Ground Coriander (Adds a bright, sweet baseline)
  • A good pinch of Celtic Sea Salt or Himalayan Pink Salt

The Culinary Preparation Steps:

  1. The Sauté Base: Melt your tablespoon of Ghee, Olive Oil, or Macadamia Oil in a frying pan over medium heat. Add your finely diced leek or onion. Sauté them steadily for 3 to 4 minutes until they are entirely soft, sweet, and translucent. This heat application is vital to break down the raw, volatile sulfur compounds completely.
  2. Toasting the Arabic Spices: Turn the heat down to low. Add your cumin, ground coriander, and chili flakes directly into the soft, hot onions. Stir vigorously for 30 seconds to let the warm fat extract the aromatic, natural oils from the spices until your kitchen smells like a traditional Arabic bakery.
  3. The Cold Tumble (Locking in the Structure): Remove the pan from the heat entirely. Throw your raw, distinct 1cm cubes of white potato, carrot or pumpkin, and your green peas straight into the pan with the spiced onions. Toss them thoroughly until every single cube is coated in the golden, spicy oil and a good pinch of Celtic salt.
  4. Ready to Stuff: Leave the filling to cool for a few minutes before spooning it into your rolled-out Wholemeal Spelt or Khorasan pastry circles (made in your Bear Dough Maker!). The raw root vegetable cubes will steam to a perfect, firm-tender state inside the pastry shell while it bakes, preserving their distinct texture so the pasty never turns into baby food.

  • 1/2 tsp Ground Fennel Seed (Optional) (For a beautiful aromatic layer that aids digestion)
  • A good pinch of Celtic Sea Salt or Himalayan Pink Salt

The Culinary Preparation Steps:

  1. The Soft Onion Base: Melt your tablespoon of Ghee or Macadamia Oil in a large frying pan over medium heat. Add your finely diced onion. Sauté steadily for 4 to 5 minutes until the onions are completely soft, sweet, transparent, and cooked right through to break down the volatile raw sulfur compounds.
  2. Searing the Chicken: Turn the heat up slightly and add your 250g of clean, diced chicken fillet to the pan. Sauté for 3 to 4 minutes, stirring frequently, just until the outside of the chicken turns opaque and holds its firm structure.
  3. Toasting the Curry Base: Turn the heat down to low. Sprinkle your curry blend, optional ground fennel seed, and a good pinch of Celtic salt directly over the chicken and soft onions. Stir constantly for 30 seconds to let the hot fats extract the rich, aromatic oils from the spices until the chicken is beautifully golden.
  4. The Freezer-Pack Tumble (No Mush!): Remove the pan from the heat entirely. Throw your 2 cups of frozen mixed peas, corn, and carrots straight into the hot pan with the curried chicken. Toss everything together thoroughly until the spiced juices coat the frozen vegetables evenly. The frozen vegetables will steam to a perfect, vibrant, firm-tender state inside the pastry case while it bakes, ensuring the pasty retains a satisfying, authentic bite.
  5. Ready to Stuff: Allow the filling to cool to room temperature before spooning a generous mound into your rolled-out Wholemeal Spelt or Khorasan pastry circles (made in your Bear Dough Maker!).

Traditional Beef & Veggie Pasty Filling

A robust, classic Cornish-style filling featuring lean beef and distinct, tiny-cubed root vegetables bound with soft onions and cracked black pepper. Provides a satisfying, authentic chew with absolutely no commercial shortcuts!

The Whole-Food Ingredients:

  • 250g Premium Lean Beef Mince (Choose high-quality, grass-fed lean mince so the fat load stays light and fast-moving in the stomach)
  • 1 cup Brown or Red Onion (Finely diced)
  • 1 cup White Potato (Peeled and cut into tiny, distinct 5mm cubes)
  • 1 cup Carrot (Peeled and cut into tiny, distinct 5mm cubes)
  • 1/2 cup Celery (Finely diced—adds a beautiful traditional crunch and digestive hydration)
  • 1 tbsp Pure Ghee or Cold-Pressed Extra Virgin Olive Oil (For your pan base)
  • 1/2 tsp Freshly Cracked Black Pepper (For that authentic, warming bakery bite)
  • A good pinch of Celtic Sea Salt or Himalayan Pink Salt

The Culinary Preparation Steps:

  1. The Sauté Base: Melt your tablespoon of Ghee or Olive Oil in a large frying pan over medium heat. Add your finely diced onion and celery. Sauté them steadily for 4 to 5 minutes until the onions are completely soft, sweet, and transparent, thoroughly breaking down the volatile raw sulfur compounds.
  2. Browning the Mince: Add the 250g of lean beef mince to the pan. Use a wooden spoon to break the meat apart vigorously as it cooks, ensuring it forms a very fine, crumbly, "matchstick-sized" texture rather than large, dense clumps. Sauté just until the beef is browned through, then stir in your cracked black pepper and Celtic salt.
  3. The Structured Tumble (No Mush!): Remove the pan from the heat entirely. Throw your raw, tiny 5mm cubes of white potato and carrot straight into the pan with the warm beef and onions. Toss everything together thoroughly so the natural juices from the beef coat the raw root vegetables. The raw potato and carrot cubes will steam to a perfect, distinct tenderness inside the pastry case as it bakes, preserving their structure so the filling never turns mushy.
  4. Ready to Stuff: Allow the filling to cool to room temperature before spooning it into your rolled-out Wholemeal Spelt or Khorasan pastry circles (made in your Bear Dough Maker!).

Acid-Safe, Stricture-Friendly Vegetarian Pasty Fillings

Because your throat tube requires a smooth, easily swallowable structure, these fillings are designed to be naturally soft and lubricated so they slide down easily without needing chemical acid-blockers.

The Creamy Moroccan Chickpea & Sweet Potato Mash

  • The Mix: Peel and dice a sweet potato (highly alkaline and soothing) and a small fennel bulb. Sauté them in a pan with a tablespoon of Ghee or Macadamia Oil until completely soft. Toss in well-rinsed chickpeas and a tablespoon of your Homemade Acid-Safe Moroccan Spice Mix.
  • The Secret: Add a splash of your Epic filtered water and mash the mixture with a fork until the chickpeas are broken down and bound seamlessly by the velvety sweet potato. It forms a luscious, moist filling that will not crumble or feel dry in a narrow throat.

2. The Golden Ginger, Lentil, and Pumpkin Cream

  • The Mix: Use red split lentils (which cook down into a smooth purée much faster than brown lentils) simmered in a gentle vegetable broth alongside cubed butternut pumpkin, a sparse sprinkle of your ALDI grated Parmesan, and a teaspoon of fresh grated ginger.
  • The Secret: Cook it until the pumpkin collapses and the lentils absorb all the liquid, creating a thick, golden dahl-style paste. Stir in a splash of your diluted Marion's Kitchen Coconut dressing right at the end for an incredibly smooth, aromatic filling that slides down beautifully.

The Herby Sautéed Fennel & Potato "Pasty" (Arabic Inspired)

  • The Mix: Take a generous amount of fresh Parsley and a few spries of Dill (both excellent carminative herbs that flatten stomach bloating). Mince them finely. Sauté very finely diced potato and diced fennel bulb in Extra Virgin Olive Oil with a pinch of Celtic salt until they are completely tender and meltingly soft.
  • The Secret: The olive oil coats the soft herbs and root vegetables, creating a traditional, savory filling that mimics the comforting texture of a classic pasty without any of the heavy, stomach-stalling fats.

Hearty, Structured Pasty Fillings (No Mush!)

These fillings hold their shape inside your pastry dough, giving you a proper, solid bite without relying on heavy commercial shortenings or triggering acid reflux.

The Chunky Moroccan Chickpea & Root Roast

  • The Texture: Distinct, whole chickpeas and firm, cubed root vegetables that hold their structure.
  • The Mix: Small, 1cm cubes of sweet potato, swede, and carrots tossed with whole, well-rinsed chickpeas. Sauté them in Ghee or Macadamia Oil with a generous tablespoon of your Homemade Acid-Safe Moroccan Spice Mix until the vegetables are tender but still have a distinct, firm bite.
  • The Finish: Fold the mixture straight into your rolled-out Spelt pastry circles. Because the vegetables are roasted firm and the chickpeas are kept whole, each bite will have a satisfying, rustic chew.

The Traditional Herby Fennel, Potato & Cheese Pasty

  • The Texture: A clean, classic Cornish-style adaptation with beautifully textured, diced vegetables.
  • The Mix: Finely cube raw waxy potatoes (like Sebago or Desiree, which hold their shape perfectly and don't turn into mash) and raw fennel bulb. Mix them with a generous handful of finely chopped fresh parsley and dill.
  • The Flavor Kick: Toss in a sparse sprinkle of your ALDI Grated Parmesan and a handful of shredded Light Mozzarella to bind it, seasoned with a good pinch of your Celtic salt. As it bakes inside the crust, the raw vegetables cook in their own steam, remaining beautifully distinct and tender-crisp.

The Rich Lentil, Mushroom & Herb Medley

  • The Texture: Meaty, robust, and earthy.
  • The Mix: Use whole brown or green French lentils (which hold their distinct shape perfectly when cooked, unlike red lentils). Sauté them with thick, sliced brown mushrooms and Finely Sliced or Diced Celery in Extra Virgin Olive Oil.
  • The Spicing: Season with a pinch of thyme, a touch of your Acid-Safe Curry Blend for warmth, and a dash of Celtic salt. This creates a deeply savoury, rich filling that mirrors a traditional meat pasty texture without any of the heavy, stomach-stalling animal fats.

The Structured Acid-Friendly Vegetarian Filling

This hearty, chunky filling provides an authentic pasty chew without any mush. Sautéing the celery, and fennel completely neutralizes the volatile, raw chemical triggers before baking.

Acid-Safe Vegetarian Medley

Prep time: 10 mins | Cook time: 15–20 mins | Servings: 2–3

Ingredients

  • 1 cup Celery or Zucchini (Peeled/diced into 1cm cubes—replaces leek to provide gentle vegetable body and natural sweetness without relaxing the LES)
  • 1/2 cup Fennel Bulb (Finely diced—adds a sweet, soothing aromatic depth)
  • 2–3 tbsp Fresh Standard Green Chives (Finely snipped—stirred in right at the end for a delicate, safe savory lift)
  • 1/8 tsp Asafoetida (Hing) (Optional, for rich cooked-onion/garlic umami depth without any allium sulfur triggers)
  • 1 cup White Potato or Sweet Potato (Peeled and cut into distinct 1cm cubes)
  • 1 cup Carrot or Pumpkin (Peeled and cut into distinct 1cm cubes)
  • 1/2 cup Frozen Peas or Sweetcorn (Sweetcorn optional based on individual fiber tolerance)
  • 1 tbsp Ghee or Macadamia Oil (For the pan base—gentle, non-irritating cooking fats)
  • 1/2 tsp Ground Turmeric (Anti-inflammatory golden depth)
  • 1/2 tsp Sweet Paprika (Provides rich color safely—ensure it is strictly 100% sweet paprika, not smoked or hot)
  • 1 tsp Sumac (Gives a bright, gentle tanginess to mimic traditional citrus acidity safely without lowering pH)
  • A good pinch of Celtic Sea Salt
  • 1 Tbsp of Nutritional Savoury Yeast Flakes. Buy the Macro one from Woolworths, it's the Best One I've found in recent years - Not "Fortified" with Cheap Nasty Chemical Vitamins. Especially the likes of Folic Acid (that's Nasty Stuff) yet it's used in Cereals that are Laden with Sugar, and almost all Multi-Vit Supplements. Don't touch it if you're Pregnant or Feeding. You are better with Organic Oats, soaked for an hour at-least or overnight in the Fridge - Many people love to do this, coupling up with some of their Favourite Fruits or Kefir or Genuine Greek Yogurt.

Instructions

  1. Warm the Base: Heat 1 tablespoon of ghee or macadamia oil in a medium skillet or saucepan over medium-low heat. If using Asafoetida (Hing), add the 1/8 teaspoon to the warm oil and stir for 5–10 seconds to activate its savory aroma.
  2. Sauté the Aromatics: Add the 1 cup of diced celery (or zucchini) and 1/2 cup of diced fennel bulb. Sauté gently for 3–5 minutes until softened.
  3. Add Vegetables & Spices: Stir in the potato/sweet potato cubes, carrot/pumpkin cubes, turmeric, sweet paprika, sumac, vegetable stock powder, and Celtic sea salt. Toss well to coat the vegetables in the golden spices.
  4. Simmer until Tender: Add about 1/3 cup of pure water or gentle broth, cover with a lid, and turn the heat down to low. Allow the vegetables to steam-simmer gently for 10–12 minutes until tender when pierced with a fork.
  5. Finish with Peas & Chives: Fold in the 1/2 cup of frozen peas (or sweetcorn) and stir for another 2 minutes until heated through. Remove from heat and stir in the freshly snipped green chives just before serving.

Acid-Safe (Moroccan Style)

The Audience: Tailor-made for your active Barrett's or severe GERD readers. Completely free of tomato, chili, raw garlic, or black pepper.

The Build: Khorasan or Heritage wheat crust stuffed with roasted carrot and pumpkin cubes, sweetcorn, finely cubed capsicum, and finely diced celery or fennel. The base is built entirely on your sautéed green leek leaves and your Homemade Acid-Safe Moroccan Spice Mix (cumin, coriander, sweet paprika, cinnamon, ginger, a pinch of allspice if your System tolerates it, Sumac).
