Simple Beans and Veggies with a Touch of Spice
Made in a BilliBoil Thermal Cooker
Step-by-Step Thermal Guide for Beans & Veggies
- Prep time: 15 minutes
- Soak time: 16–18 hours
- Stove-top time: 12–15 minutes
- BillyBoil time: 2.5 to 3 hours
- Yield: 3 to 4 gentle, nourishing servings
Acid-Safe Wellness Note: This recipe eliminates all high-risk alliums (onion, garlic, leeks), citrus, and hot spices. It relies on naturally sweet Kent pumpkin, savory nutritional yeast, and fresh soft herbs added right at the end to keep digestion calm and soothe the esophagus.
Ingredients
The Bean Base:
- 1/2 cup dry Oloyin beans (soaked Overnight in plenty of water, then thoroughly drained and rinsed) If you don't have Oloyin Beans, you can use Cannellini Beans or Navy Beans
The Fresh Vegetables:
- 1 full stick Celery, sliced (adds clean flavor and natural mineral sodium)
- 1 medium Carrot, cut into 1 cm thick coins
- 1 cup Kent Pumpkin, peeled and cut into medium 2.5 cm chunks
- 1/2 medium Red or Yellow Capsicum, deseeded and diced. Do Not use Green Capsicum.
Seasoning & Broth Base:
- 1 tbsp Macro Savoury Yeast Flakes (gives a wonderful, rich savory depth similar to organic vegetable stock powder)
- 1/2 tsp Herbamare (or to taste, added near the end)
- 1/2 tsp ground turmeric (for golden color and gentle antioxidant support)
- 1 small slice fresh ginger (optional, for extra digestive warmth)
- 4.5 to 5 cups water (enough to ensure the 3L BillyBoil inner pot is at least half to two-thirds full for proper heat retention)
Fresh Finishing Herbs (Added at the End):
- 2 tbsp fresh Chives, finely chopped
- 2 tbsp fresh Flat-Leaf Parsley, finely chopped
- 2 tbsp fresh Coriander (Cilantro) leaves, chopped
- 1 tsp Ghee by Coco Earth or 2 tsp Olive Oil
Instructions
1. Prepare the Inner Pot:
Place the drained, soaked Oloyin beans, sliced celery, carrot coins, Kent pumpkin chunks, and diced red capsicum into the stainless steel inner pot of your 3-Litre BillyBoil.
2. Season the Base:
Add the Macro Savoury Yeast Flakes, turmeric powder, and optional ginger slice. Pour in 4.5 to 5 cups of fresh water—making sure the pot is filled at least half-way to provide enough heat mass for thermal cooking. Stir gently to combine. (Keep aside the Herbamare and fresh herbs for now!)
3. Stove-Top Boiling Phase (12–15 Mins):
Place the inner pot on your stove over medium-high heat with the lid on. Bring to a rolling, vigorous boil. Once boiling, adjust heat slightly to maintain a steady, active boil for 12 to 15 minutes. This ensures the dense pumpkin, carrots, and bean centers reach a uniform temperature.
4. The BillyBoil Phase (2.5 to 3 Hours):
Carefully lift the hot inner pot from the stove and place it directly into the insulated BillyBoil outer chamber. Lock the lid securely immediately. Leave undisturbed for 2.5 to 3 hours. Do not open the lid during this time so no heat escapes.
5. Finish & Season:
Open your BillyBoil—the Oloyin beans will be tender and buttery, and the pumpkin soft and comforting. Stir through the Herbamare, fresh chives, parsley, and coriander. Put the lid back on for 3 to 5 minutes to let the gentle residual heat infuse the soft herbs.
6. Serve:
Ladle warm into bowls as a soothing soup/stew, or serve alongside Steamed Rice, Fonio or Millet.
Oloyin Beans (Nigerian Honey Beans)
- Why it works: A prized heirloom legume (Vigna unguiculata) from West Africa, named "Oloyin" for its naturally sweet, honey-like profile. It is renowned for being exceptionally gentle on sensitive digestive systems because its thin skin and unique starch structure make it far less prone to gas or bloating than standard beans.
- Flavor & Texture: Exceptionally creamy, rich, and naturally sweet with a velvety, melt-in-your-mouth texture when cooked in the BillyBoil. It creates a lush, deeply comforting broth without needing heavy fats or cream.
Cannellini Beans (White Kidney Beans)
- Why it works: Cannellini beans have thin skins and a silky, buttery centre once cooked.
- Flavor & Texture: Very mild and slightly nutty. They absorb the savory yeast flakes, celery, and pumpkin broth beautifully without overwhelming the dish.
